Mint and Coriander Sauce with Yogurt and Mango Chutney

Ingredients:

  • 1 cup fresh mint leaves, packed

  • 1 cup fresh coriander (cilantro) leaves, packed

  • 1-2 green chilies (adjust to your heat preference)

  • 2 tablespoons mango chutney

  • 1/2 cup plain yogurt (Greek or regular, depending on your consistency preference)

  • Salt, to taste

  • 1 clove garlic

Instructions:

  1. Prepare Ingredients: Start by washing the mint and coriander leaves thoroughly. Remove any hard stems. Roughly chop the green chilies and garlic (you can remove the seeds from the chilies if you want it less spicy).

  2. Blending: In a blender or food processor, combine the mint leaves, coriander leaves, green chilies, garlic, and mango chutney. Add a splash of water, if needed, and blend until you achieve a smooth paste.

  3. Mix with Yogurt: Transfer the blended mixture to a bowl. Stir in the yogurt until you achieve a smooth consistency. If your sauce is too thick, you can add a little more yogurt or a splash of water to thin it out.

  4. Flavoring: Taste the sauce and add salt according to your preference.

  5. Serve: Transfer the sauce to a serving bowl. While it can be served immediately, letting it sit for a few hours (or overnight in the refrigerator) will allow the flavors to meld and enhance.
