Crispy Smoky Paprika Potatoes
Ingredients:
Potatoes (preferably a starchy variety like Russet) - as many as you need
Salt, to taste
Smoked paprika, to taste
Dried parsley, to taste
Olive oil or your preferred cooking oil (for baking)
Frying oil (like canola or vegetable oil)
Instructions:
Preparation:
Wash the potatoes meticulously. For added texture and flavor, consider retaining the skins, but peeling is optional.
Slice the potatoes uniformly to ensure even cooking.
Boil:
Put the potatoes in a sizable pot, covering them with cold water and a dash of salt.
Boil the water and allow the potatoes to cook just until they soften slightly. Depending on their size, this should take around 8-10 minutes.
Drain and steam-dry the potatoes for a short while.
Season:
Move the semi-cooked potatoes to a mixing bowl.
Add your cooking oil along with salt, smoked paprika, and dried parsley. Toss them for even coating.
Bake:
Warm your oven to 425°F (220°C).
Lay out the potatoes on a baking tray, ensuring they're spaced out.
Roast for 15-20 minutes until they start to show a golden hue. (Since we'll fry them next, they needn't be completely roasted.)
Fry:
