Crispy Smoky Paprika Potatoes

  • Salt, to taste

  • Smoked paprika, to taste

  • Dried parsley, to taste

  • Olive oil or your preferred cooking oil (for baking)

  • Frying oil (like canola or vegetable oil)

Instructions:

  1. Preparation:

    • Wash the potatoes meticulously. For added texture and flavor, consider retaining the skins, but peeling is optional.

    • Slice the potatoes uniformly to ensure even cooking.

  2. Boil:

    • Put the potatoes in a sizable pot, covering them with cold water and a dash of salt.

    • Boil the water and allow the potatoes to cook just until they soften slightly. Depending on their size, this should take around 8-10 minutes.

    • Drain and steam-dry the potatoes for a short while.

  3. Season:

    • Move the semi-cooked potatoes to a mixing bowl.

    • Add your cooking oil along with salt, smoked paprika, and dried parsley. Toss them for even coating.

  4. Bake:

    • Warm your oven to 425°F (220°C).

    • Lay out the potatoes on a baking tray, ensuring they're spaced out.
