Crispy Smoky Paprika Potatoes

  • Potatoes (preferably a starchy variety like Russet) - as many as you need

  • Salt, to taste

  • Smoked paprika, to taste

  • Dried parsley, to taste

  • Olive oil or your preferred cooking oil (for baking)

  • Frying oil (like canola or vegetable oil)

  1. Preparation:

    • Wash the potatoes meticulously. For added texture and flavor, consider retaining the skins, but peeling is optional.

    • Slice the potatoes uniformly to ensure even cooking.

  2. Boil:

    • Put the potatoes in a sizable pot, covering them with cold water and a dash of salt.

    • Boil the water and allow the potatoes to cook just until they soften slightly. Depending on their size, this should take around 8-10 minutes.

    • Drain and steam-dry the potatoes for a short while.

  3. Season:

    • Move the semi-cooked potatoes to a mixing bowl.

    • Add your cooking oil along with salt, smoked paprika, and dried parsley. Toss them for even coating.

  4. Bake:

    • Warm your oven to 425°F (220°C).

    • Lay out the potatoes on a baking tray, ensuring they're spaced out.

    • Roast for 15-20 minutes until they start to show a golden hue. (Since we'll fry them next, they needn't be completely roasted.)

  5. Fry:

    • Get your frying oil ready in a deep fryer or a deep pan, heating it to 350°F (175°C).

    • Gradually introduce the baked potatoes to the sizzling oil.

    • Fry them until they are golden-brown and crispy, which will likely be 3-5 minutes.

    • Use a slotted spoon to remove and drain the crispy potatoes on paper towels.

  6. Serve:

    • Add a sprinkle of salt if desired, and maybe a sprinkle of dried parsley for aesthetics.

    • Relish them while they're hot and sizzling!

Bursting with smokiness and with a tantalizing crispy exterior, these potatoes are a treat for the senses. Perfect as a side dish or even a snack, their unique double-cooking method ensures a taste and texture that's hard to beat. Crispy on the outside, soft on the inside – dive in and enjoy!
